It is the juice of olives of the Picual variety, typical mainly of the region of Andalusia, especially in the provinces of Jaen, Granada, Cordoba and Seville. In this area, we collect only those fruits that meet the properties that we consider fundamental to obtain an Extra Virgin of very high quality.
An early harvesting of the olive is made, thus achieving a higher quality EVOO and thus ensuring the preservation of its organoleptic properties.

This variety is very rich in oleic acid, very beneficial for reducing the risks of cardiovascular and liver diseases, as well as a large amount of natural antioxidants and an excellent composition of fatty acids.
It is an EVOO of great strength and body, with hints of wood, banana, as well as freshly cut grass. Its flavor is slightly bitter and spicy and its aroma is reminiscent of fruity herbs. It is an EVOO that withstands high temperatures very well, making it perfect for fried chicken, vegetables or fish.
