The different varieties of pepper:
The black, white and green pepper, all come from the same plant (piper nigrum), and the differences in colour and flavour are a function of the level of maturity of the seed and the subsequent drying process. Black pepper, the best known and most commonly used, is harvested halfway through the ripening process, and the seed is boiled briefly before drying. Green pepper is harvested when the seed is still unripe and green in colour. During drying, a chemical compound is usually added to preserve the colour. As I said at the beginning, it can also be found fresh, preserved in glass jars, immersed in brine or vinegar. Finally, white pepper is obtained from the fully ripe seed, which has been removed the dark skin that covers it. If you have not already done so, I advise you to try these three types of pepper. Not only is different in appearance and color, but the flavors are different so that different recipes can fit better to one type of pepper or another.
