La Font del Mosquit, a white wine that carries with it the distinction of the Denominación de Origen Calificada (DOQ) Priorat in Spain, immerses us in a world of freshness and complexity. This wine, made from a balanced 72% Macabeo and 28% Garnacha Blanca, stands as a testimony to the diversity and oenological mastery of the Priorat.
Stemming from various estates in Torroja del Priorat, La Font del Mosquit benefits from the richness of the terroir characterised by slate, clay-limestone and alluvial soils. The Macabeo vines, some of which are up to 100 years old, are cultivated under sustainable agricultural practices and are in the process of obtaining organic certification.
The elaboration of this white wine begins with a careful maceration of the Macabeo grapes from old vines with their skins for 12 hours before pressing. On the other hand, the younger Macabeo and Garnacha Blanca grapes are directly pressed. The resulting must undergoes spontaneous fermentation in stainless steel tanks, and the end of the fermentation, as well as the ageing, takes place in 1,100-litre polyethylene eggs.
