Tasting notes: Wine with light golden notes that denote its aging in barrels. Clean, bright, and crystalline. Intense and complex nose with aromas of anise, honey, almond and lilac flowers, quince, nuts, chamomile, and an elegant mineral background. Broad and voluminous, fresh, a wine of length, with depth and aging potential.

Geology and Soil: Diverse terrains in terms of composition due to the erosion and sedimentation of the Duero River. Different microclimates marked by the Atlantic-Mediterranean confluence.

Viticulture: Manual harvest. Average vineyard age: 80 years. Altitude: 830 m. Sauvignon Blanc, from vineyards in Finca Torremilanos in the municipal district of Aranda de Duero. Average vineyard age: 25 years. Altitude: 830-850. Viura, from the Rubial vineyard in Fuentenebro. 180-year-old vineyard at 1000 meters altitude. Chardonnay, from vineyards located in Finca Torremilanos.

Production: This wine comes from 2 different harvest moments. Sauvignon Blanc grapes ferment together with Chardonnay. White of the country grapes ferment with Viura. Fermentation in 225-liter oak barrels, over several months. Aging for 24 months with lees in the same barrels where it fermented. Malolactic fermentation, unclarified and unfiltered wine. No added SO2.

Pairing: It is a surprising wine, so look for a surprising pairing.
