We present to you the unparalleled aged goat cheese from Collados Quesería, artisanally made. Made with pasteurized milk from Granada goats, raised in the region of Huesca, at the foot of the Sierra de la Sagra, at over 1,700m of altitude. This is essential to obtain a unique and high-quality milk. It is extraordinary if you enjoy mild cheeses, but with an unmistakable and incomparable flavor. The process used is traditional, manually pressing it with a knotted cloth, which gives it its characteristic shape. Then it matures in the cellar for about 3 to 5 months, to achieve the texture and flavor that will make you fall in love with it at first sight.

Made in Spain Gourmet always guarantees you the best of Spanish gastronomy.

The aged cheese from Collados Quesería is a cheese made with pure goat's milk, it is a local product (Granada) that guarantees the highest quality of its ingredients. The tradition in the process requires it to be done by hand and the herds are always in absolute freedom. And being 100% natural guarantees that its texture and flavor are wonderfully delicious.

The goats are happy and raised in freedom, and we find nuances of rosemary, thyme, lavender, rockrose, and other shrub species from the Sierra Norte Granadina both in the milk and in the cheese. Starting from this natural raw material, the cheese is made through a traditional process in which only rennet from kid goats and salt are added.

How do they make their cheeses?

They start with 100% Murcian-Granadina goat's milk, wonderful goats that graze happily (essential for the flavors of their beloved cheeses). Then they curdle the milk and transform it into a new product: cheese. At each step, the raw material is always of the highest quality. They follow the traditional production process, to which they have added the necessary technological advances to ensure a top-quality product. One of the key moments in the process is fermentation, where the magic happens.

Their cheeses mature from 4 weeks to 8. The wait is worth it. From such a careful production process and such high-quality raw material, the final product is Excellent: pressed paste cheeses with a tender rind and a creamy touch. If we add that the consumption of goat's milk and its derivatives decreases cholesterol, promotes the absorption of fats, proteins, calcium, and minerals, we have more than enough reasons to cut ourselves another piece of this wonderful cheese. Because where there is cheese, there is happiness.

The goats of Quesería Collados, of the highest quality

Because the cheese from Collados Quesería is artisanal production and comes from goats. And not just any goats, the envy of goats, those that live freely in the Sierra de la Sagra, in the north of the province of Granada. This mountain range has always been a refuge for goat livestock. The fact that the goats graze happily on its slopes makes the milk they produce of the highest quality. And this is the basis for the production of their artisanal cheese.

They have goats of all kinds, those that pose for photos like true influencers, those that never stop all day (up the hill, down the hill), or those that like to eat gourmet pastures.
