Intense and complex nose with aromas of anise, honey, almond blossom and lilac, quince, nuts, chamomile, and an elegant mineral background. Average vineyard age: 25 years. Altitude: 830-850. Viura, from the Rubial vineyard in Fuentenebro. 180-year-old vineyard at 1000 meters above sea level. Chardonnay, from vineyards located in the Torremilanos Estate.
Winemaking: This wine belongs to 2 different harvest moments. The Sauvignon Blanc grape ferments with Chardonnay. The White of the country grape ferments with Viura. Fermentation in 225-liter oak barrels, for several months. Aging for 24 months on lees in the same barrels in which it fermented. Malolactic fermentation, unclarified and unfiltered wine. No added SO2.
Pairing: It is a surprising wine so look for a surprising pairing.
