Breeding
The White Wine Quinta de Couselo Rosal Selection is aged on fine lees for 40 months and stabilized in stainless steel tanks to reach sufficient maturity for bottling. Subsequently, it undergoes a bottling aging which lasts 12 months.
Subzone O Rosal
The White Wine Quinta de Couselo Rosal Selectionis made from the grape varieties Albariño, Caiñó Blanco and Loureirofrom our own vineyards (about 8 hectares) and leased estates. The age of these vines is 25 years, which have a traditional training system of the Galician coast: the vine training. Winemaker José Manuel Martínez Juste and his team prepare to harvest the grapes by hand in 15 kg boxes and choose the best quality to make their wines. The soils of these vineyards contain mostly granitic soils with some estates where the soil can be slate schist.
Making
Once the bunches arrive at the winery, the grapes are subjected to temperature control using a cold room with a controlled temperature of 5º. Subsequently, the bunches are taken to a vibrating selection table and the chosen ones go through the whole grape destemming and maceration process before going through the pneumatic pressing, which lasts about 1.5 hours.
After going through these processes, the musts are separated, static racking and temperature-controlled fermentation takes place.
