Production
Very few wineries use batonage of the fine lees in the tank, and few do a batonage of lees in barrel. When we perform batonage with the lees in the barrel, we achieve more body, concentration, and complexity. If we increase the proportion of the lees, we will increase the complexity but we need to maintain the blend for a longer time.
Thus, we have discovered a new way to produce a new verdejo with excellent bottle aging and maximum complexity. The wine has been 50% with the lees in new barrels for 9 months, performing batonage twice a day for two months and then once a day every two days until the end. Nowadays, the wine is bottled and maturing, and its aromatic characteristics are unique.
