The Premium extra virgin olive oil iOliva is made from hand-picked Hojiblanca olives harvested in October from our centennial olive groves in Rute, Córdoba. This early-harvest oil is cold-pressed at a controlled temperature of 22 ºC in our family mill, ensuring the preservation of all its aromas and health properties, like polyphenols. The product has a golden-green color and an aroma reminiscent of a fresh orchard, with notes of green tomato and herbaceous scents evoking mountain walks. Ideal for use raw, it is perfect for toasts, salads, tartares, carpaccios, and finishing fish, meat, and vegetable dishes. Unfiltered for the first months after harvest, it is then filtered to ensure optimal preservation.
