Depending on the selection, you can choose between different olive varieties such as Arbequina, Marteña (Picual), and Lechín, and opt for traditional or unfiltered oil. The oil is ideal for dressing and finishing raw dishes, as well as for cooking a wide range of foods. The bottles should be kept tightly closed in a cool place, protected from light and heat, to maintain their quality. Project 1957, located in La Ventilla, Córdoba, has a family tradition of three generations in producing this oil from olives picked directly from the tree.
