The Iberico ham (50% Iberian breed) is a ham from the Ibérico pig. It comes from pigs that are descended from at least 50% purebred Iberian pigs.
The Ibérico ham is prepared by the ham masters of "Jamon España". Carefully removed from a whole Ibérico ham and manually, mechanically pressed to achieve a uniform slice yield. The piece is free of bones and rind and has a low fat content.
Unlike the Bellota pigs, the pigs of the Cebo ham do not exclusively grow up in the wild, but gain weight until slaughter in grain feeding. Therefore, the Ibérico ham is labeled as Cebo, the Spanish word for grain feed, in contrast to the acorn-fed (bellota) ham.
