Originating from Spain, this loin is made from the ileosacral muscle of the pig, which is almost free of external fat. After being salted, seasoned, and stuffed into a natural casing, it undergoes a curing process that lasts six months, sheltered from the shade of the Arribes del Duero. This process gives it its characteristic flavor and aroma, unmistakable in the variety of Iberian cured meats. It is recommended to serve at a temperature of approximately 24°C, allowing the product to come to room temperature for about 30 minutes before serving.
