The San Ruffino Aged Sheep Cheese is an aged cheese made from raw sheep's milk by Quesos El Pastor.
This San Ruffino Aged Sheep Cheese has a strong aroma, characteristic of sheep cheese, with a very developed and persistent flavor that has certain spicy notes. Its texture is compact and substantial.
This cheese has received several awards, including the bronze medal at the World Cheese Awards in 2021 and 2022.

To enjoy the full flavor of the San Ruffino Aged Sheep Cheese, we recommend consuming it at approximately 17°C.
If it is packaged, we recommend removing it from its packaging and letting it sit at room temperature for 30 minutes before serving. If it has been stored in the refrigerator, this time may increase to up to 2 hours.
Total aging from 12 to 18 months.
Store the cheese in a cool place between 6-12°C or in the refrigerator between 8-12°C with its wrapping.
When ready to consume, let it sit at room temperature for 10 minutes.
