Interview with Lardiente: Madrid's Most Famous Cochinita Pibil

We spoke with Juan Carlos Sisa, a founding partner of the project, to learn how the brand came to be, the challenges it has overcome, and the philosophy that continues to guide every business decision.

The Beginnings of Lardiente

«It started with a chef and me,» recalls Juan Carlos. Their initial idea was to create a ghost kitchen specializing in authentic Mexican food and deliver it through food delivery platforms. Like many hospitality startups, the beginning was challenging. Operating costs quickly exceeded revenue, forcing the team to rethink its strategy. Instead of giving up, they turned that challenge into an opportunity.

The next step was to build a brand around what matters most: the product. Instead of trying to produce everything in-house, Lardiente began working with some of the best suppliers specializing in Mexican cuisine to ensure authentic ingredients and consistent quality. “We leave the authenticity of the product in the hands of the best suppliers.” Also this decision allowed them to focus all their efforts on offering an experience true to Mexican cuisine—something that remains one of the brand’s cornerstones today.

Adapting to the City’s Rhythm

The experience also taught them to understand their customers’ eating habits. Above all, while Tuesdays and Wednesdays tend to be quieter days, activity begins to pick up starting on Thursday and peaks over the weekend. That’s why a significant part of Lardiente’s concept is designed for those seeking good food in the evening, and they’ve also extended their hours to accommodate different times of the day.

During the interview with Lardiente, Juan Carlos shares a reflection that sums up their journey very well. “You always have to weigh the risk against the potential benefit. The important thing is to be clear about it and decide if it’s really worth it.” A philosophy that reflects the reality of many entrepreneurs: adapting, learning, and making decisions with a long-term vision.
