Not everyone can boast of Shoulders with double Montanera.
Some of our pigs reach twice the age of the rest of 100% Iberian pigs, which is why they spend double the time in Montanera, 2 Montaneras, double the acorn than a normal ham. Can you imagine a 200% Acorn ham? Well, we have it for you.
For a little extra, be amazed by double the quality.
The 100% Iberian acorn shoulder always has an external layer of fat (yellow fat) higher than the rest of Iberian shoulders. Thanks to this layer, the shoulder can withstand all the necessary months for its proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and it can vary up to 400 grams of meat up or down in a 5kg shoulder, and it is normal for about 1.4kg of meat to remain in a 4.5-5 kg shoulder once we have removed the bone and external fat.
Usually, the larger the shoulder, the higher % of meat it will have.
However, if you believe that the yield of your shoulder is clearly lower than these percentages, do not hesitate to contact us.
