This piece comes from the hind limbs of selected Iberian pigs from an early age. Externally, it is identified by its elongated and stylized shape, its black hoof, its narrow shank, and the golden color of the fat. When cut, it presents numerous veins of fat with small white spots that indicate its low salt content and slow curing. Its taste is smooth and sweet, with a very rich fat full of nuances that explodes in the palate, creating an explosion of flavors. It presents very balanced and intense aromas.
