Whole piece of Iberian acorn shoulder. Handcrafted in the heart of Guijuelo from Iberian pigs raised in extensive cork oak and holm oak pastures. Raised extensively and fed with acorns from the pastures of Salamanca and cured in cellars in Guijuelo.
With a fine, delicate, slightly salty flavor, with a slightly fibrous texture, very unctuous and consistent. Forged in the cellar.
