Not everyone can boast of Shoulders with double montanera.
Some of our pigs reach double the age of the rest of the 100% Iberian pigs, which is why they spend double the time in montanera, 2 montaneras, double the acorns of a normal ham.. Can you imagine a 200% Acorn ham? Well, we have it for you.

The 100% Iberian Acorn Shoulder always has an outer layer of fat (yellow fat) higher than other Iberian shoulders. Thanks to this layer, the shoulder can withstand all the necessary months for proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and it can vary up to 400 grams of meat up or down in a 5kg shoulder and the usual thing is that there is about 1.4kg of meat in a 4.5-5 kg shoulder once we have removed the bone and the outer fat.
Normally, the larger the shoulder, the higher % of meat it will have.
