It is a cylindrical cheese that is destroyed by its own weight, which gives it a texture with eyes and is creamy when cut. The paste is yellowish and uniform with small eyes, and the rind is rough and natural, so it can be eaten
It has a certain smell and aroma of nuts and hay. The flavor is mild with a touch of salt, having a medium persistence in the mouth.
It pairs very well with young reds, white amontillado and red and wheat beer.
