Meet the product
Artichoke is a very digestive food, rich in fibre and low in calories. It contains calcium and phosphorus, as well as vitamins B1, C, B3, B5 and B6, lowers cholesterol and is diuretic. The artichoke is consumed in many different ways, usually cooked, roasted in the oven, fried, battered with flour and even in omelette. Also in stews, stewed or sautéed with peas and ham, etc., as a garnish with countless dishes
How to preserve and prepare them? For a good preservation keep them in a dry and cool place. If you want to put them in the fridge, you have two options: in a closed plastic bag or submerged in water with the stem, like a flower. Once cooked, they can be frozen. After cutting them, rub them with lemon juice to prevent them from turning black. To make them tender, you can add a little lemon juice and a teaspoon of flour to the cooking water. When cooking artichokes it is best to avoid prolonged boiling because "overcooking" affects their flavour and texture. Artichokes can be eaten raw, in salads, dressed with a few drops of oil and a little salt and pepper. Baked with ham or salted anchovies, covered with béchamel sauce and au gratin.
