Zucchini is one of the vegetables with the lowest caloric content. They contain 96.5% water, minerals (potassium and calcium) and vitamins (A and C)
How to prepare them?
They can be kept in the refrigerator for about two weeks, or frozen (if blanched beforehand for 3-5 minutes). Zucchini is a very versatile vegetable that can be prepared in many ways: boiled, sautéed, fried, sautéed, roasted or stuffed, in purees, creams, soups, au gratin, with béchamel sauce, in pistos and omelets. It combines perfectly with vegetables such as pumpkin, leek and potato.
