The Bouyguette des collines is a small goat representative of the garrigues of the south and in particular of the Tarn.
Hill Bouyguette is a creamy, smooth cheese: it melts gently in the mouth and develops lactic and aromatic herb flavours such as rosemary and thyme.
The maturing period is three weeks on average.
