It is a cheese made from raw cow's milk from the Avesnois country of about 150g with 28% fat on finished product.
The Boulette d'Avesnes is part of the washed-rind soft cheese family.
Its tarragon smell gives way to a strong, peppery flavor. Its rind is sprinkled with paprika.
The colour of the Avesnes dumpling is orange tinged with pink, its texture is more or less creamy and smooth depending on its maturation.
Tasted throughout the year, but especially from March to December.
Avesnes dumplings is produced with crushed Maroilles paste and sprinkled with paprika, parsley and cracked pepper.
Originally the cheeses were made by cooking the residual buttermilk.
