Conde de Haro Brut is the latest bet from the renowned Bodega Muga in Rioja.
Conde de Haro Brut is a blend of Viura and Malvasía grape varieties. It comes from the same area as the Prado Enea vineyards, high areas, but unlike them, it is oriented towards the north in order to protect the vineyards from the heat that could alter the delicate varietal aroma necessary in cavas. The grapes are harvested around the third week of September, about 15 days earlier than those dedicated to white wines. The harvest must be done in 15-kilogram boxes to respect the integrity of the fruit. After passing through the selection belt, the clusters go to the press. Pressing is the most delicate moment to preserve quality, only the must from gentle pressing is used to make this cava. The must undergoes a first fermentation in 1,000-liter wooden tanks to be kept in them until the end of April.
From here, the second fermentation is triggered in the bottle. The wine is aged on lees for at least 14 more months.
Conde de Haro Brut is ideal to accompany Iberian ham, fish, and seafood. It is recommended to serve at a temperature between 6-8ºC.
