The careful production of Convento Oreja Roble takes place in modern stainless steel tanks with a capacity of 20,000 liters, with strict automatic temperature control. The fermentation process lasts an average of 5 days at a controlled temperature of 22ºC, followed by a total maceration period of 9 days. The malolactic fermentation is completed during the month of November, adding complexity and smoothness to the wine.
After fermentation, this wine rests for a minimum of 4 months in carefully selected French and American oak barrels from the finest cooperages. This aging process imparts subtle notes of wood that harmoniously blend with the intense aromas of fresh red fruits, such as strawberries, raspberries, and currants, which are appreciated on the nose.
