This coffee is a blend of washed Honduras from the Aruco Cooperative. The blend is called Las Toltecas.
The name Las Toltecas comes from the original descendants of the Corquin area where the Aruco Cooperative is located. This coffee comes from 13 members of the Cooperative and is a blend of parainema, lempira, IHCafe 90, and red catuai. The coffee is grown at an altitude of 1200-1400 meters above sea level. All processing takes place at the centralized wet mill located outside of Corquin, 800 meters above sea level. Here, the conditions are much better for processing and creating uniform and stable lots. The coffee undergoes flotation and washing before being depulped and fermented in tiled tanks for 12 to 16 hours overnight. The coffee is then dried on patios for 7 to 10 days, depending on weather conditions. Sometimes it is necessary to use a mechanical dryer if the weather has been humid. The dryers are always kept below 40 degrees at a stable temperature.
