This Blue Sapphire edition comes in a 500ml bottle, blue and shaped like an emerald cut sapphire. It contains Extra Virgin Organic Olive Oil of the Picual variety. The Picual Organic oil has a strong personality. It has a green color, a very intense fruity flavor, and a sensation of density, spiciness, and medium bitterness. It is a highly appreciated variety due to the precocity of its production, ease of cultivation, and quality of the olive oil obtained, highlighting the high proportion of oleic acid. Its sensory profile can be defined as a very intense fruity flavor of green olives, and very complex, with notes of fig tree, grass, stem, alloza, citrus, and tomato plant. In the mouth, it has a sweet entry, medium bitterness, and a slightly spicier taste, all very balanced. Picual Organic has a more intense fruity flavor compared to conventional Picual, which is due to the use of only organic products for the nutrition of the olive trees.

THE PRODUCTION PROCESS

The fruit is harvested with the utmost care, through a selection process. From the moment the fruit begins to ripen, numerous tests are carried out in the different areas of the estate until the determination of the ideal zone and time for harvesting. The harvest takes place between October 1st and 15th, depending on the year and the fruit's development. Due to the fact that October records daytime temperatures around 30ºC, the fruit is harvested at night to ensure that the harvest temperature and subsequent milling temperature are below 20ºC.
