During very specific days, at the beginning of the harvesting season, in the month of October, it is made from green fruits to obtain its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, since in the green stage the olive has not yet formed its oil. So you can imagine how exclusive this oil is.
