Lagar del Soto Bio Extra Virgin Olive Oil is a superior category monovarietal made from the absolutely green manzanilla cacereña variety from organic, traditional, and rainfed olive groves. It is an early harvest oil. Unique for its organoleptic characteristics, this oil comes from absolutely green olives, a daring move that makes it an almost unique experience. During very specific days, at the beginning of the harvesting season, in the month of October, it is made from green fruits to obtain its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, since in the green stage the olive has not yet formed its oil. So you can imagine how exclusive this oil is.
