On very specific days, at the beginning of the harvesting season, during the month of October, it is made from green fruits to obtain its unique attributes. At least 20 kg of olives are needed to obtain 1 liter of product, since in green olives the oil has not yet formed. So you can imagine how exclusive this oil is.
