Did you know what Gazta Zaharra means? Gaztazarra or Gazta Zaharra means Gazta = Cheese and Zaharra = Old "old cheese" in Basque, as a little bit of "mother" or "old cheese" is needed as a starter for the fermentative process of the new cheese to be produced.
For its production, dry and strong cheeses are usually used, which are grated or thinly sliced and placed in a clay container or pot, where fermentation takes place. Optionally, to soften the texture and give it more creaminess, a little sheep's milk, water, or brandy can be added. This mixture is stirred daily for a minimum of 2 months.
