This artisan cheese, D.O. Manchego, is made from raw milk from La Mancha sheep raised on the farm itself. Its rind is natural , made up of the cheese itself. The personalized treatment (since each cheese passes through the hands of the artisan at least ten times) and its minimum aging period of nine months greatly limit production and make it a gourmet cheese.
All our cheeses are made without lysozyme derived from eggs.
The secret of this pecorino? A careful preparation and a slow maturing process, where technology manages to unite the characteristics of an artisan cheese - flavor, aroma, texture, nutrition - with the rigor of the procedures that guarantee its quality and health.
