Nutritional Value and Benefits
The nutritional properties of tomatoes are exceptional. Tomatoes are low in energy and fats, but rich in vitamins and minerals. Minerals such as magnesium and potassium stand out, among others, and vitamins such as C, A, and some from the B group. In addition, the pigment that gives it its characteristic red color belongs to substances called carotenoids (or pro-vitamin A), such as lycopene. This nutrient is particularly relevant, as lycopene and vitamin C are nutrients with powerful antioxidant action - that is, they fight free radicals, thus exerting a protective function on the body.
While part of the vitamin C is lost when cooking tomatoes, the opposite happens with lycopene. Cooking tomatoes with olive oil improves the availability and absorption of this nutrient. Ideal to accompany pasta, meats, fish, rice...
