Tired of buying sliced hams without knowing how many packs they will send you? At Don Ibérico we know that not all hams are the same, so we have decided to offer you three different sizes of sliced ham so you can decide the size of the ham we will slice for you.
The Ibérico Field Bait Ham (50% Ibérico Breed) always has an external layer of fat (yellow fat). Thanks to this layer, the ham can withstand all the necessary months for proper curing.
The total use of the ham can vary between 38% and 44%.
This means that not all pieces are the same and it can vary up to half a kg of meat up or down in an 8kg ham, and it is normal for there to be about 3.2kg of meat left in an 8kg ham once we have removed the bone and external fat.
Usually, the larger the ham, the higher % of meat it will have.
However, if you believe that the yield of your ham is clearly below these percentages, do not hesitate to contact us.
