Our cheese changes its name but not its taste! Le Severac Authentique becomes Le Salerac. The 2021 season has already begun, and our first cheeses are being made and matured. Le Salerac, 100% raw Salers cow's milk is now available for pre-order. The first tommes ripened between 6 to 8 months will be ready to be delivered to you at the end of July.
The Salerac, made only with Salers cow's milk has a minimum of 6 months of maturation. It is at this time of ripening that the Séverac takes all its dimension, all its olfactory roundness. Matured for more than 6 months, it reveals a golden and marbled paste under a spotted brown rind. In addition, real aromas of the land, such as undergrowth or the cellar of a buron, emerge. When tasted, exceptional flavours of liquorice and gentian burst in the mouth. More than 120 varieties of grass per square metre make up the mountain that the Salers cows graze on. During the Estive season, understand from March to September, that the cows' milk is the tastiest.

Our cheese remains additive and preservative free. While using the ancestral Auvergne know-how, the Salers milk curdles in a chestnut wood sheaf. Ultimately it is this unique process that gives an authentic taste to each daily production. Thanks to its small tomme format, this therefore makes it an ideal cheese for 6 to 8 people.
FRESH PRODUCE: The start of shipments will begin at the end of July, with the respect of food safety standards. Thus, each Salerac 2021 is delivered in an isothermal package by Chronofresh with tracking link.
Guaranteed 100% Salers milk. The number on the rind is the date of manufacture, it indicates the day of manufacture. Therefore, the exact maturation time of each cheese is easily identifiable.
