INSTRUCTIONS
Clean with cold water. Cook covered and without stirring for 20 minutes over low heat. Use 2 cups of water for 1 cup of millet. Serve alone or with vegetables. Season with olive oil. Cooked millet is often used as a base for making cakes, croquettes, and vegetable meatballs.
