Olavidia is a spectacular cheese artisanally made with pasteurized goat's milk, with several awards under its belt, with a soft ivory-white paste and a slightly citrusy flavor. A fine layer of vegetable charcoal in the center, obtained from olive bone ash, makes it a particularly appetizing cheese.

It has a slightly lemony and strong yogurt aroma.

The rind of Olavidia is edible, naturally moldy. Olavidia cheese is a soft artisan goat cheese perfect for "opening the palate" before other stronger cheeses.
