From the small livestock farm of Hermanos Parra Jiménez, in the heart of La Mancha and with the desire to recover the native breed of Manchegan black sheep currently in danger of extinction, this cheese is made D.O Manchego with organic certification in a completely artisan and traditional way, resulting in a pressed cheese of compact texture and flavor characteristic of this peculiar region. We are undoubtedly before the result of the effort of recovery of livestock in this region and respect for the environment.
