It is rich in fiber and carbohydrates, which make it satiating and help control our appetite. It is also rich in folic acid and other vitamins, and is an ally of various brain functions. The vitamin B1 it contains reduces homocysteine and therefore also reduces the risk of cardiovascular disease. Being rich in folic acid, it is highly recommended for pregnant women and during breastfeeding.
PREPARATION: Corn can be consumed in various ways, one of which is boiling it: measure the desired amount of dry organic corn kernels in a large container. Cover the kernels with water and let them soak overnight in the refrigerator to soften them. Drain the corn in a colander and rinse it well. Place the corn in a large pot and add enough water to cover the kernels. Bring the water to a boil over high heat. Reduce the heat to medium or medium-low and cook the corn for two or three hours, or until the kernels begin to pop. It should be soft and slightly chewy when fully cooked. Drain the corn and serve it as is, add it to your favorite recipes, or freeze it for future use. Another way to consume corn kernels is as delicious organic popcorn: heat oil in a pan for 5 minutes, add the corn and cover. When the popping stops, turn off the heat and season with salt or sugar to taste.
