The Montsant D.O. is one of the youngest in the country but its relationship with vineyards and wine dates back to the Roman Empire. The production of the Analema collection is limited to 600 bottles of each wine. This red wine is made from 100% Garnacha Peluda variety from vineyards with an average age of 70-80 years. Analema Negre de nit ages for a minimum of 27 months in French oak barrels of 500 liters and bottle before being released to the market. Tasting notes: Deep garnet red wine with aromas that evoke notes of black fruit (blackcurrant, blackberry, black cherry, blueberry) and subtle notes of ripe fruit, wrapped in a complex background of eucalyptus and mint. Intense, flavorful, balanced, and long. Its acidity balances the alcohol content, providing a good body in the mouth. Pairing suggestions: Red meats, game, stews, fatty fish, rice dishes, aged cheese, cured meats, and Iberian ham. To preserve its quality, it is not subjected to any physical treatment, which could result in slight precipitation. Its best characteristics are achieved at a serving temperature around 15 ºC.
Winemaker's note
The vine cultivation is done in goblet with minimal pruning for minimal intervention in the vineyard. The soil is calcareous, with clays and dolomites, where conglomerate nodules formed with gypsum and sands, with flint content, provide great minerality. Low-yield vines where we prioritize grape quality over quantity. The harvest is manual in 12 kg boxes for greater agility in the entrance to the winery. Fermentation is carried out at controlled temperature in stainless steel tanks with native yeasts. Aging in second-use 500 l French oak barrels for 12 months, to remain another 15 in the bottle before its release to the market.
