Smoked mini Cheddar made with pasteurized cow's milk and matured for 14 months. Despite its size, it is a very classic Cheddar. It has a crumbly and sandy texture, indicating a long maturation in cold storage, with a long and deep flavor with notes of pantry, moss, and damp earth, with sweet and acidic finishes.
Due to its strong flavor, this cheese pairs very well with sweet and fruity red wines rich in tannins, as well as with cream or oloroso sherries, but also with barrel-fermented white wines or pale ales. It is best enjoyed with wheat bread and neutral flavors.
