Truffle caviar is one of the latest innovations of Tartuflanghe, caviar with a truffle taste. Made with black winter truffle juice, obtained directly during the cooking of the truffle. The truffle juice is reduced into small pearls, with the appearance, color and texture of caviar, through spherification.
