Cumbre de Trujillo sheep cheese is a cheese from Extremadura made with pasteurized milk from sheep raised on the Pascualete Farm (owned by the Counts of Romanones) located in the province of Cáceres (Extremadura).
This semi-cured sheep cheese made from pasteurized milk, following a recipe inherited for centuries from the wisest shepherds in the area, is a sensory delight. The appearance of Cumbre de Trujillo: ivory white color with small irregular eyes sprinkled on a creamy but consistent texture, anticipates the pleasure of tasting it to the senses. Rich in aroma, it presents hints of fresh milk, curd, and butter, subtle aromas of nuts and vanilla, toffee, and spicy spices. The mouthfeel is soft, with a warm, smooth, and very pleasant impression, and a frank taste, but balanced, with hints of well-developed sheep milk curd and spicy and spiced notes at the end.
