Climatology and vegetative cycle: drier and colder winter than usual, sequence of clear days, pruning was done under optimal conditions. Early and uniform budbreak between late February (lower and sheltered plots) and mid-March (higher altitude plots). Spring with rain and mild temperatures, ending with a cooler feeling - late May, early June. Summer with few precipitation, concentrated in storms, many sunny days. Temperatures have not been high thanks to the sea breeze, late veraison and slow grape ripening with entry into autumn with south winds. The vegetative cycle has closed under the best conditions, absence of disease in the vines, very healthy foliage. The harvest has been carried out under very good conditions and the health of the grapes has been extraordinary.
Winemaking: aimed at achieving the expression of the soils and the variety. Destemming and brief cold maceration. Made from free-run juice. Separate vinification by plots. Fermentation with our own identified yeasts from our vineyards. Aging on lees in tanks. Minimal use of sulfur.
