Red Wine Vivanco Reserva, made from the grape varieties: Tempranillo and Graciano, belonging to the D.O. La Rioja in vineyards selected from the terroirs of Briones, Rioja Alta with an average age of 35 years, grown in soils of clay-limestone profile.
The harvest begins with the Tempranillo variety followed by the Graciano variety and is carried out in small boxes separately in order not to damage them, all the grapes remain in a cold chamber for 36 hours before processing with a double selection of clusters and grapes. For winemaking, each variety is made separately, with gentle crushing, the must is gravity-fed into small French oak vats where it ferments and macerates in contact with the skins at a controlled maximum temperature of 30º C, receiving light pumping over for 20 days. Malolactic fermentation takes place in French oak vats and aging is 24 months in new and second year French and American oak barrels.
The Vivanco winery is located in Briones, in the foothills of the Sierra de Cantabria and on the banks of the Ebro River, with the innovation of having a subway winery that is functional and aesthetic. The building is constructed in this way with the aim of minimizing the environmental impact in favor of landscape conservation.
