Nosso represented a turning point in the history of Bodegas Menade, a natural Verdejo, without the addition of sulfites, neither in the vineyard nor in the winery, without sulfur or copper treatments. Tasting notes: Nosso is a white wine that presents aromas on the nose that are reminiscent of stone fruits accompanied by herbal nuances that recall thyme or fennel accompanied by a mineral touch. There may be a subtle presence of carbon dioxide that makes its passage through the mouth even more refreshing and balanced, with a slightly bitter note at the end, a characteristic reminder of the variety.
Elaboration: The grapes used come from the Menade Estate, located at about 750 meters above sea level in the vicinity of the Duero. The soils are mainly clayey and stony.
Nosso is produced completely manually and naturally, without using harmful products for cultivation in the different processes carried out.
After harvesting, the Nosso grapes are quickly transported to the winery, where the grains are first allowed to ferment with wild yeasts at temperatures ranging from 18° to 24°.
After alcoholic fermentation, we allow the development of malolactic fermentation with the own yeasts; which gives the wine unctuousness, volume, and microbiological stability to be enjoyed anywhere in the world. Nosso finally ages with its skins for between four and five months.

The Vineyard
The key is to combine tradition and technology to pamper the vines. It is about seeking an alliance with the environment to take advantage of the resources it provides, caring for it through traditional cultural practices. At Menade, they replace chemical treatments with other natural techniques, such as plant infusions (nettles, cinnamon...) or whey, which are more respectful of the soil, the vine, and the yeasts. Far from being enemies, the insects that populate Menade's vineyard are faithful allies in pest prevention. First, they are attracted with aromatic extracts to act as predators, and then they rest in their 'hotels', pollination gardens full of aromatic plants where insects and reptiles live in harmony. The ecosystem of the estates is completed with a series of mobile shrubs and trees in order to improve the biodiversity that populates the vineyard. A poly-specific garden with more than 40 species from Castilla y León that is alive all year round welcomes the winery. All these practices have an impact on the final result of the wines, as they not only taste good but also feel good. They produce wines free of allergens and histamines. Also known as the Pollination Garden of Bodegas Menade, it is a large poly-specific garden with native species of Castilla y León that is alive all year round, so perennial species and caudal have been used in order to develop a large floral circuit for all types of insects, seeking a wide entomological variety.
The great Insect Hotel contains 40 species representative of the different strata of the ecosystem. At ground level, aromatic species such as lavender, sage, or different types of rosemary have been planted.
At the middle level, wild roses, red heather, sloes, elderberries, and wild blackberries have been planted, among others.
The plants and trees installed at Bodegas Menade come from outdoor crops with repotted roots, that is, a reinforced root system. A studied procedure of environmental restoration in an area marked by progressive desertification, due to the climatic characteristics of the area and the cultural practices that are not respectful of the environment.
Although Menade's largest Pollination Garden is located near the winery's facilities in Rueda, there are also other small hotels in the different plots of the estate.
The creation of these micro-ecosystems provides a habitat for insects and predatory birds of other harmful insects. That is, the floral species will become 'hiding places', improve environmental richness, and allow for a balance between flora and fauna.
