Not everyone can boast of Shoulders with double montanera.
Some of our pigs reach double the age of the rest of 100% Iberian pigs, which is why they spend twice as much time in montanera, 2 montaneras, twice as much acorn as a normal ham.. Can you imagine a 200% Acorn-fed ham? Well, we have it for you.
For just a little more, be amazed by double the quality.
The 100% Iberian acorn-fed shoulder always has an external layer of fat (yellow fat) higher than the rest of Iberian shoulders. Thanks to this layer, the shoulder can withstand all the necessary months for its proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and the amount of meat can vary up to 400 grams up or down in a 5kg shoulder, and it is normal to have about 1.4kg of meat left in a 4.5-5 kg shoulder once the bone and external fat have been removed.
Usually, the larger the shoulder, the higher % of meat it will have.
However, if you believe that the yield of your shoulder is clearly lower than these percentages, do not hesitate to contact us.
