Not everyone can boast of Shoulders with double montanera.
Some of our pigs reach twice the age of the rest of the 100% Iberian pigs, which is why they spend twice as much time in montanera, 2 montaneras, double the acorn consumption of a regular ham. Can you imagine a 200% Acorn-fed ham? Well, we have it for you.

The 100% Iberian Acorn-fed Shoulder always has a layer of external fat (yellow fat) superior to the rest of Iberian shoulders. Thanks to this layer, the shoulder can withstand all the necessary months for proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and it can vary up to 400 grams of meat up or down in a 5kg shoulder, and it is normal for there to be about 1.4kg of meat in a 4.5-5kg shoulder once the bone and external fat have been removed.
Usually, the larger the shoulder, the higher % of meat it will have.
