Artisan vegan crackers with black truffle and olive oil, Lady Joseph
Lady Joseph infuses the oil with black truffle. Black truffle (Tuber Melanosporum Vitt) has an intense flavor and exquisite aroma. The harvest takes place in the village of Sarrión (Teruel) where the largest oak plantation in the world is located.
Also used is the Tuber Aestivum or Summer Truffle, which grows from early summer to autumn. It can be distinguished by its angular wrinkles. Its tone is dark brown and the pulp has an intense and characteristic perfume and flavor.
The flour is ground in an artisanal way. Stone-ground flours are more nutritious and aromatic than those ground with industrial steel rollers.
The dough is rested for 12 hours and undergoes a slow cooking process to maintain the nutrients and obtain an extra thin and crispy cracker, but at the same time consistent.
So you can enjoy them alone or accompanied by hummus, Iberian charcuterie, creamy cheeses, or whatever you like, even on their own.
