This tuna is caught "by hand" (with a fishing rod) by the fishing fleet of the Cantabrian Sea. The best fish is acquired at the fish market and it is prepared fresh in Santoña (Cantabria) at M.A. Revilla. It is characterized by an uneven texture and a very juicy mouthfeel. Without a doubt, it is a delicacy.

Bonito del Norte (Thunnus Alalunga)
Bonito del Norte (Thunnus Alalunga), also known as white tuna, belongs to the tuna family and is part of the culinary excellence of the northern region of Spain, especially the Cantabrian coast, thanks to its exquisite flavor and smooth texture, making it the preferred preserve for the most discerning palates.
At the end of spring, Bonito del Norte migrates to the waters of the Bay of Biscay and that's when the fishing season for Bonito begins, which usually ends in October. It is captured using selective fishing techniques, one by one, with hooks, to prevent the fish from suffering and to offer a higher quality meat. This species is characterized by its large pectoral fins.
Its consumption is recommended by doctors and nutritionists due to its high Omega-3 content, which helps reduce cholesterol and triglyceride levels in the blood, contributing to the reduction of the risk of cardiovascular diseases.
