Affected in cellars by hand for a minimum of 4 months, Severac's tomme offers a beautiful marbled ochre paste with exceptional flavours of liquorice and gentian. A farm cheese made from raw Salers cow's milk, characteristic of its Auvergne terroir, paired with a whole duck foie gras produced on the farm in the heart of the Atlantic Pyrenees in a small, exclusive production.
The ducks graze freely in the wide open spaces of the farm and are fed only with cereals grown on the property which gives the product quite remarkable flowery aromas.
